With the arrival of spring and the launch of our new Signature Stay Dry, Stay True: Vernal Renewal Gradient design, we wanted to craft a drink that captures that exact feeling: fresh, layered, and a perfect transition into warmer days.
This Grapefruit and Rosemary Botanical Spritz naturally creates a beautiful pink-to-clear visual gradient in your glass, mirroring the aesthetic of our new drop. It’s vibrant, herbaceous, and exactly what you want in your hand while wearing your new favourite hoodie on a crisp spring patio.
Because the non-alcoholic beverage world often leans heavily on sugary syrups, we’ve designed this drink to be bright and tart, with clear instructions on how to customize the sweetness to your exact palate.
THE INGREDIENTS
2 oz Freshly squeezed pink grapefruit juice (adds the base pink gradient)
0.5 oz Fresh lime juice
0.5 oz Simple syrup, agave, or honey water (see sweetness notes below)
1 Fresh rosemary sprig (plus an extra for garnish)
3-4 oz Premium sparkling water or dry club soda
Ice (large cubes preferred)
A pinch of flaky sea salt (optional, but highly recommended)
THE METHOD
Muddle the Botanicals: In a cocktail shaker, lightly muddle the fresh rosemary sprig with the lime juice and your chosen sweetener. You just want to bruise the rosemary to release its natural oils (DO NOT shred it).
Shake it Up: Add the freshly squeezed pink grapefruit juice and a handful of ice to the shaker. Shake vigorously for 10-15 seconds until the outside of the shaker is frosty.
Create the Gradient Pour: Strain the mixture into a tall highball glass or a large wine glass filled with fresh ice.
Top and Garnish: Slowly pour the sparkling water over the ice to top off the glass. This gentle pour preserves the pink-to-clear gradient. Garnish with a fresh sprig of rosemary and a grapefruit twist. Add a tiny pinch of flaky sea salt right on top to make the citrus notes pop.

One of the biggest hurdles in mindful drinking is navigating the sea of overly sweet mocktails. If you prefer a more dry, bitter, or herbaceous flavor profile, here is how you can easily adjust this recipe without losing the complexity:
Ditch the Syrup Completely: Grapefruit naturally contains sugar. Omit the simple syrup/agave entirely and let the natural tartness of the grapefruit and lime take center stage.
Leverage the Salt: Adding that pinch of flaky sea salt doesn’t make the drink salty; it actually suppresses the perception of bitterness and enhances the natural sweetness of the citrus without adding a single gram of sugar.
Use a Bitter Mixer: If you want a drink that mimics the bite of a traditional cocktail, swap the plain sparkling water for a premium zero-sugar tonic water or a bitter botanical soda. The quinine will add a sharp, sophisticated edge.
Add a Dash of Apple Cider Vinegar: If you remove the sweetener and feel the drink is missing “punch,” add a half-teaspoon of apple cider vinegar. It provides a complex, fermented tang that mimics the burn of alcohol and balances the fruit juices beautifully.
