THE INGREDIENTS
1/2 ripe Ontario freestone peach, roughly chopped
1 oz fresh orange juice
1/2 oz fresh lemon juice
1/2 oz vanilla simple syrup
3 oz chilled ginger beer or zero-proof sparkling wine
Ice
Garnish: A fresh peach slice and a sprig of mint
THE METHOD
Muddle the Fruit: In the bottom of a cocktail shaker, thoroughly muddle the chopped Ontario peach with the vanilla simple syrup until it forms a jammy puree.
Shake it Up: Add the fresh orange juice, fresh lemon juice, and a generous scoop of ice to the shaker. Secure the lid and shake vigorously for 10–15 seconds to chill and aerate the citrus.
Strain: Double-strain the mixture through a fine-mesh sieve into a rocks glass or goblet filled with fresh ice. This removes the fruit pulp and keeps the drink beautifully smooth.
Make it Frizzy: Top the glass with chilled ginger beer or your favourite zero-proof sparkling wine.
