There is a specific magic that happens in the North during the final days of April. The heavy blanket of winter finally recedes, revealing the damp, fragrant floor of the forest. It is a season of transition, where the air is still crisp enough for a jacket, but the scent of life returning to the soil is unmistakable.
Toast the Earth’s awakening with The Boreal Bloom, a mocktail designed to bridge the gap between the evergreen woods and the first floral buds of spring.
We wanted to create a non-alcoholic spirit experience that felt grounded yet effervescent. By pairing the resinous, botanical backbone of a juniper-forward non-alcoholic spirit with the earthy tartness of rhubarb and the woodsy aroma of scorched rosemary, we’ve captured a “hike in the woods” in a highball glass.
The result is a dry, sophisticated profile that intentionally avoids the sugary pitfalls of traditional mocktails.
THE INGREDIENTS
2 oz Premium Juniper-forward Non-Alcoholic Spirit (London Dry style)
¾ oz Fresh Lime Juice (strained)
½ oz Pine Needle or Rosemary Simple Syrup
2 dashes Non-alcoholic Rhubarb Bitters
3 oz Elderflower Tonic Water
Garnish: A charred rosemary sprig and a thin ribbon of fresh cucumber
THE METHOD
Chill Your Glass: Fill a highball or large wine glass with ice. Large, irregular chunks work best here to minimize dilution while keeping the drink bone-cold.
The Shake: In a cocktail shaker, combine your non-alcoholic spirit, lime juice, and the herbal syrup. Add a handful of ice and shake vigorously for just 10 seconds. You want to chill the liquid without breaking it down too much.
The Build: Strain the mixture into your prepared glass. Slowly pour the elderflower tonic over the top. The carbonation will lift the botanical oils to the surface.
The Bleed: Add two dashes of rhubarb bitters directly to the top. Do not stir; let the pinkish-red bitters slowly bleed through the clear drink like a spring sunset.
The Aroma: Take a rosemary sprig and give it a quick kiss with a lighter or torch until it wisps with smoke. Tuck it into the glass alongside a long, thin ribbon of cucumber.
The Boreal Bloom captures the North’s shifting terroir. Robust juniper and pine anchor the drink in the ancient, evergreen forest, while delicate elderflower and rhubarb herald the first blush of spring. DIY FOREST SYRUP
To truly elevate this pour, skip the store-bought sweeteners. Make a Pine or Rosemary Syrup by simmering 1 cup of water and 1 cup of sugar with two large sprigs of rosemary (or a handful of food-grade spruce tips) for 10 minutes. Let it steep until cool, then strain.
SELECTING YOUR SPIRIT
To get that signature gin-like bite, look for these premium Canadian and international brands, which are widely available at major retailers (e.g., zero-proof section of provincial liquor stores and grocery store chains) and specialty shops (e.g., Upside Drinks, Dry Variety, The Sobr Market, or Zero Cocktail Bar). Suggestions:

Sobrii 0-Gin: It has a classic London Dry burn thanks to the addition of ginseng and a heavy juniper base.

Lumette!: A fantastic “Bright Light” gin alternative. It’s very botanical and works beautifully with the spruce and rosemary notes in this recipe.

Tanqueray 0.0: This is the gold standard for a juniper-forward profile and widely available across Canada.

Seedlip Garden 108: While not a gin by name, this is a globally available herbal spirit. It leans heavily into peas, hay, and hops.
A SWEETER BLOOM
If you find the botanical notes a bit too sharp, you can easily pivot to a more fruit-forward profile. Swap the pine/rosemary syrup for a strawberry or raspberry reduction. Replace the elderflower tonic with a sparkling rose lemonade. You’ll still get the sophisticated backbone of the non-alcoholic spirit, but with a softer, sun-drenched finish that feels like the first warm day of spring.
