THE INGREDIENTS
2 oz Blueberry coulis (homemade or store-bought)
0.5 oz Cane syrup (adjust to your preferred sweetness)
1 oz Freshly squeezed lime juice
6-8 Fresh mint leaves
Top with chilled soda water
Garnish with fresh blueberries and a sprig of mint
THE METHOD
Muddle the Base: Place the fresh mint leaves and cane syrup in a sturdy glass. Gently muddle the mint to release the essential oils without shredding the leaves.
Build the Flavour: Pour in the blueberry coulis and fresh lime juice.
Chill: Fill the glass with cracked or cubed ice.
Effervescence: Top with chilled soda water and stir gently to lift the coulis through the ice, creating a beautiful gradient.
Finish: Garnish with a few fresh blueberries and a slap of mint to wake up the aroma.
THE SECRET INGREDIENT: BLUEBERRY COULIS
A coulis is simply a thick sauce made from puréed and strained fruit. It provides a much richer texture and more “true” fruit flavour than a standard syrup.
HOW TO MAKE IT AT HOME
Simmer 2 cups of fresh or frozen blueberries with 2 tbsp of water and 1 tbsp of cane syrup in a small saucepan over medium heat.
Cook for about 10 minutes until the berries burst and the liquid thickens.
Remove from heat and blend until smooth.
Press the mixture through a fine-mesh sieve to remove the skins and seeds. Let it cool completely before using.
